Here is a recipe for mexican rice that is low on fat and calories.   It is made from fresh ingredients and instead of white rice, I use Mahatma whole grain rice.  The recipe is as follows:


1 cup Mahatma whole grain rice

1 Tbsp spanish olive oil or canola oil

1/2 cup finely diced white onion

1 tsp kosher salt

1-2 cloves garlic-finely diced

1 can whole tomatoes-put in blender or food processor and blend until smooth

1 1/2 tsp cumin

1 tsp salt

2 1/2 cups water

1/2-1 cup cilantro-finely chopped

In a skillet, add oil and rice and over medium heat, cook the rice until the color changes to a deeper brown about 5 minutes or so, stirring occasionally. Be careful not to burn the rice!  Add onions and salt and cook until the onions become translucent.  Add garlic and cook for 1 minute.   Add the tomatoes, cumin, and salt and stir until all incorporated.  Add water and let the rice mixture come to a boil.   Turn heat to low and cover.  Cook for 30-45 minutes, until its done.  Add cilantro, stir and serve!


This soup can be made several different ways.  Add cooked chicken or ground beef for added protein!  Substitute black beans for your bean of choice!  Garnish with avocados or sour cream!  Whatever floats your boat!!

1 140z. can diced tomatoes

1/2 can rotel

1 14oz. can chicken broth

3 cups water

1T chili powder

1tsp cumin

1 cup barley

1 can black beans

1 can corn

fresh lime

cilantro for garnish

Combine first 7 ingredients.  Over high heat bring to a boil; cover and reduce heat to low.  Simmer for 20 minutes, stirring occasionally.  Add beans and corn; increase heat to high until soup comes to a boil. Cover and reduce heat to low.  Simmer for another 5 minutes until barley is tender.  Garnish with cilantro and add fresh lime juice!

1 can tuna packed in water-drain
1/2 cup diced onion
1 boiled egg-discard yoke and dice the egg white
7 cherry tomatoes-cut each in half
avocado-use half and dice
cilantro-about a handful and dice
1-2 Tbsp red wine vinegar
1 tsp. olive oil
salt and pepper to taste

Combine all ingredients in a bowl and serve with Matzo crackers or with whole grain pasta of choice!
