This soup can be made several different ways.  Add cooked chicken or ground beef for added protein!  Substitute black beans for your bean of choice!  Garnish with avocados or sour cream!  Whatever floats your boat!!

1 140z. can diced tomatoes

1/2 can rotel

1 14oz. can chicken broth

3 cups water

1T chili powder

1tsp cumin

1 cup barley

1 can black beans

1 can corn

fresh lime

cilantro for garnish

Combine first 7 ingredients.  Over high heat bring to a boil; cover and reduce heat to low.  Simmer for 20 minutes, stirring occasionally.  Add beans and corn; increase heat to high until soup comes to a boil. Cover and reduce heat to low.  Simmer for another 5 minutes until barley is tender.  Garnish with cilantro and add fresh lime juice!
